This weeks Menu! (a day late : )

Well since we had a holiday weekend, my husband was home with me from Friday through yesterday, thus I am a day late with this weeks menu. But it was well worth it - we had a fantastic weekend with friends and family!

Here's this weeks Meals-At-A-Glance! (with recipe)

Monday
We went "Meat-y" instead of "Meat-LESS" this week, since we had TONS of leftovers!

Tuesday
Chicken Spaghetti
Salad
Bread

Wednesday
Breakfast! (Sausage, biscuits, gravy, and scrambled eggs)

Thursday
Chicken Burritoes
Rice, beans

Friday
Onion Dogs
Tater Tots

Saturday
Night out with my mom and dad!

Chicken Spaghetti (this is my friend, Laura's recipe that I modifed for my family [and what I have on hand, LOL])
1 lb boneless, skinless chicken breast, cooked and shredded/cubed
1 lb spaghetti
4 oz velveeta
1 8oz can cream of mushroom soup
1/4 c chopped roasted red bell peppers
1/4 c chopped sun dried tomatoes
1/4 c chopped frozen onion
1 T olive oil

In a saute pan, cook onion in olive oil until translucent. Add peppers and tomatoes and mix well. Cook pasta according to package directions, drain and return to pan. While pasta is hot, add cheese, cream of mushroom soup, chicken, and vegetable mix. Mix gently to combine.

*optional - turn out into a casserole dish and top with cheddar cheese. Bake at 425 until bubbly and brown. Allow to sit 10 minutes before serving.*

*Bonus Recipe*

Arroz con Pollo
4-6 servings

Every family has their own version of chicken and rice - some (like us) have quite a few! This is a "traditional" Spanish recipe that uses pre-mixed, fresh,  and frozen items, in the spirit of Sandra Lee's "Semi-Homemade". The traditional version would use whole cut up chicken. Add mussels, shrimp, and/or chorizo and you would have a quick and easy version of Paella.

1 10 oz package of Saffron rice mix
4 boneless, skinless chicken breasts, cut into bite size pieces
1/4 c roasted red bell peppers, chopped
1 c frozen chopped onion, celery, and bell pepper mix (also known as seasoning mix)
1/4 c frozen peas
1 carrots, chopped or 1/4 c frozen carrots
(an omit both and use 1/2 c frozen peas and carrots)
4 c water or broth
1 t margarine
1 t olive oil

Preheat oven to 375
Heat olive oil in a non-stick saute pan over medium high heat. Add chicken and saute until browned on all sides. Remove and set aside. Add onion mix and carrots and saute until onions are translucent and carrots are almost tender. Spray a 9x13 casserole with cooking spray. Combine all ingredients in casserole and mix to combine. Cover with foil. Bake at 375 for 45 minutes. Remove foil and continue cooking for 10-15 minutes or until rice is tender. Allow to cool for 10-15 minutes before serving.

Corn Zucchini Soup with Basil 
(Original recipe courtesy Kathleen Daelmans, with my own flair added)

1 t olive oil
2 medium zucchini, cut into bite sized pieces
1 c frozen corn
1 can fire roasted tomatoes
1 small onion, diced
1 small red bell pepper, diced OR 1/2 c diced roasted red bell pepper
1 T itallian seasoning
salt and pepper to taste
1 16 oz box chicken stock
1/4 c fresh basil leaves, torn

In a soup pot, saute zucchini, onion, and bell pepper in oil until just tender.  Add corn and tomatoes with the juice, mix to combine.  Add seasonings and mix well.  Add stock.  Mix well.  Bring to boil over med-high heat. Reduce heat to medium low and simmer 15 minutes, or until veggies are tender.  Remove from heat, add basil, and allow to cool for 10 minutes before serving.
