Menu for the week of Monday, June 14, 2010.

Meatless Monday
Breakfast: Cereal
Lunch: Soup
Dinner: Corn-Zucchini soup with basil

Terrific Tuesday
Breakfast: Breakfast wrap
Lunch:  Chef Boyardee(kids), leftover soup (me)
Dinner: Taco Night

Wonderful Wednesday
Breakfast: Omelettes
Lunch: Sandwiches, fruit, carrots
Dinner: Italian Grilled Chicken, Pesto stuffed portobello mushrooms

Thrilling Thursday
Breakfast: Oatmeal
Lunch: Chef Boyardee (kids), Chicken on salad (me)
Dinner: Tuna Helper, salad

Fabulous Friday
Breakfast: Breakfast wrap
Lunch: Sandwiches, fruit, carrots
Dinner: Pizza burgers, sweet potato fries

Super Saturday
Breakfast: Cereal
Lunch: Sandwiches
Dinner: Turkey dogs, fritos

Sunday
Breakfast: TBD
Lunch: Sammies
Dinner: Spaghetti

Corn Zucchini Soup with Basil 
(Original recipe courtesy Kathleen Daelmans, with my own flair added)

1 t olive oil
2 medium zucchini, cut into bite sized pieces
1 c frozen corn
1 can fire roasted tomatoes
1 small onion, diced
1 small red bell pepper, diced OR 1/2 c diced roasted red bell pepper
1 T itallian seasoning
salt and pepper to taste
1 16 oz box chicken stock
1/4 c fresh basil leaves, torn

In a soup pot, saute zucchini, onion, and bell pepper in oil until just tender.  Add corn and tomatoes with the juice, mix to combine.  Add seasonings and mix well.  Add stock.  Mix well.  Bring to boil over med-high heat. Reduce heat to medium low and simmer 15 minutes, or until veggies are tender.  Remove from heat, add basil, and allow to cool for 10 minutes before serving.

Taco night sounds great. I so need to start menu planning. I would much rather eat out. Grr. I need more motivation to cook. This is helping.
